Spinach and Cream Cheese Pinwheels
Spinach and Cream Cheese Pinwheels
1 puff pastry sheet
8 oz package cream cheese, softened
10 oz package frozen chopped spinach, thawed and well drained.
¼ teaspoon salt
1/8 teaspoon pepper
1 egg
1 tablespoon water
Preheat oven to 400˚ F.
Beat together egg and water. Set aside.
Combine cream cheese, spinach, salt, and pepper.
On a lightly floured surface, roll out your puff pastry sheet to a 12-14 inch rectangle.
Brush egg mixture on puff pastry sheet.
Spread out your spinach and cream cheese mixture out on the puff pastry sheet(use your fingers if you have to), leaving about ½ inch on the side closets to you.
Roll up the puff pastry, starting with the furthest edge from you.
Once rolled up, use a sharp knife to cut ¾ inch pieces.
Place them on a parchment lined cookie sheet.
Bake them for 15-25 minutes or until golden brown*
Makes 18-30 pinwheels depending on the size you cute them.

Night Owls That Cook is Updated
We have updated Night Owls That Cook. We went in and fixed the mistakes that we were aware of.
When publishing we didn't realize that Microsoft Word kept changing the page size of the cookbook, Amazon had the restrictions of 6 by 9 page size for paperback and Word kept changing it back to the 8.5 by 11. That is why the indexing was messed up.
Thank you to everyone who purchased the first version of this book that had the mistakes.
