Baked Turkey Taco, Bean, and Cheese Quesadilla
2 flour tortillas 10 inch size
1/3 cup refried beans
1 cup ground taco turkey*
Mexican blend shredded cheese*
1 tablespoon butter, melted
Baking sheet
Wire rack that fits the baking sheet
Aluminum foil
Preheat your oven to 400˚.
Place your baking sheet down and then line with the aluminum foil on the baking sheet shiny side up.
After that place your wire rack on your baking sheet.
On one side of the tortilla spread out some of the melted butter with a brush.
Place tortilla buttered side down on the wire rack.
On the side facing up spread the refried beans on the tortilla.
Then add your ground turkey taco meat and cheese.
Place your second tortilla on top of the refired beans and cheese.
Next spread the top side of the tortilla with the melted butter.
Bake for about 10-15 minutes on the middle rack of the oven or until crispy enough for you on the one side.
At the halfway mark take out of oven let cool for two minutes and then flip.
Place back in the oven and cook for another 10-15 minutes or until it is crispy enough on this side for you.
Let it cool for a minute or two and then cut it with a pizza cutter or kitchen scissors.
Makes 1 to 2 servings depending on your appetite.
*Note:
All stoves are different, so go with the time you think is best to flip your quesadilla.
