Baked Turkey Taco, Bean, and Cheese Quesadilla

Baked Turkey Taco, Bean, and Cheese Quesadilla

2 flour tortillas 10 inch size

1/3 cup refried beans

1 cup ground taco turkey*

Mexican blend shredded cheese*

1 tablespoon butter, melted

Baking sheet

Wire rack that fits the baking sheet

Aluminum foil

Preheat your oven to 400˚.

Place your baking sheet down and then line with the aluminum foil on the baking sheet shiny side up.

After that place your wire rack on your baking sheet.

On one side of the tortilla spread out some of the melted butter with a brush.

Place tortilla buttered side down on the wire rack.

On the side facing up spread the refried beans on the tortilla.

Then add your ground turkey taco meat and cheese.

Place your second tortilla on top of the refired beans and cheese.

Next spread the top side of the tortilla with the melted butter.

Bake for about 10-15 minutes on the middle rack of the oven or until crispy enough for you on the one side.

At the halfway mark take out of oven let cool for two minutes and then flip.

Place back in the oven and cook for another 10-15 minutes or until it is crispy enough on this side for you.

Let it cool for a minute or two and then cut it with a pizza cutter or kitchen scissors.

Makes 1 to 2 servings depending on your appetite.

*Note:

All stoves are different, so go with the time you think is best to flip your quesadilla.

Ground Turkey Taco recipe can be found in the Entrees and Fillings section of this cookbook.

Add as much or as little cheese as you want.

If you need to see how we make this quesadilla, it is up on our YouTube channel.

Cajun Quesadilla

Dirty Rice is a favorite dinner for the guys in my life. I was making a bean and cheese quesadilla for myself when they decided they were hungry as well. At the last minute I added the leftover Dirty Rice and they loved it!

2 flour tortillas, 10" size*
1/4 cup refried beans
1/8 cup leftover dirty rice*
1/8 cup sauteed onions & peppers
1/8 cup Mexican cheese blend
Cooking spray
Salsa for serving
Sour Cream for serving

Preheat oven to 350 degrees.
Line a baking sheet with parchment paper.
Place one flour tortilla on the baking sheet. Spread the refried beans on the tortilla. You can add more or less it is up to you.
Then top with the dirty rice, onions and peppers.
Sprinkle the top with the Mexican cheese.
Then top with the other flour tortilla and spray lightly with the cooking spray.
Place in the oven for 15 minutes. You just want to melt the cheese and lightly brown the tortillas. Serve with salsa and sour cream if desired.
Makes 1 serving

Notes*
I use Mission Flour Tortillas and Zatarains Dirty Rice Mix.

Quick Meat & Bean Quesadillas

I make these from leftover taco meat and refried beans for an easy way to make quesadillas my family loves. Plus it is a great way to give leftovers a new look with little expense!

Ingredients:
¼ cup refried beans*
¼ cup leftover taco meat*
2 tortillas*
1 tablespoon chopped onion (If desired)
1 tablespoon chopped pitted black olives (If desired)
¼ cup (25g or 0.9oz) shredded mild cheddar cheese
¼ cup (25g or 0.9oz) quesadilla cheese*
Cooking spray or olive oil
Taco sauce or salsa

Directions:
Preheat oven to 350F (180C or Gas mark 4).

Line a baking sheet with parchment paper.

Place one tortilla on the parchment paper. Spoon the refried beans onto the wrapper and spread the beans all over the wrapper. Then do the same with the taco meat, chopped onions, and the black olives. Sprinkle both cheeses over the top of the black olives.

Cover with the second tortilla then spray the top of the tortilla with cooking spray or brush with a little olive oil.

Put into the preheated oven for 15 to 20 minutes or until heated through, and the cheese is melted.
Wait a few minutes to cool slightly then cut into wedges. I always use my pizza cutter for this.

Serve with taco sauce or salsa.

Makes one quesadilla

*Notes:
Use as much of the refried beans and/or meat as you want. It is your quesadilla so make it to your liking.

Tortillas can be either the huge or smaller ones again this is your preference. If using the bigger wrappers I would add more beans and meat.

I use Ole Mexican cheese or Cacique Queso Quesadilla cheese.

I cannot find the equivalent of the quesadilla cheese in Europe. If anyone knows where this cheese can be found we would love to hear about it!!
