Lemon Doodle Cookies

Dacia's Lemon Doodle Cookies





Ingredients:
1 ½ cups (300g) sugar
1 cup (225g) butter, softened
2 eggs
1 teaspoon lemon extract
2 to 3 drops lemon oil for candy (I use LorAnn candy oils)
2 ¾ cups (345g) all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
¼ teaspoon salt
1 ½ teaspoons lemon zest

¼ cup (50g) lemon sugar
2 teaspoons ground cinnamon

Directions:

Heat oven to 400 degrees F (204 degrees C/Gas Mark 6). Mix 1 ½ cups sugar, the butter, eggs, lemon extract, and lemon oil in large bowl. Stir in flour, cream of tartar, baking soda, salt, and lemon zest. Shape dough into 1 ¼ -inch balls. Mix ¼  cup sugar and the cinnamon. Roll balls in lemon-cinnamon sugar mixture. Place 2 inches apart on ungreased cookie sheet. Bake 8 to 10 minutes or until set. Remove from cookie sheet to wire rack. 

Lemon Sugar: Place ¼ cup (50g) sugar in an air-tight glass jar. Add 4 strips off lemon rind and close jar tightly. Let sit for at least a week. Sometimes I grate the rind of one lemon instead of the strips. It makes a pretty presentation when used on cookies or even the rim of a glass filled with lemonade.
