I make these from leftover taco meat and refried beans for
an easy way to make quesadillas my family loves. Plus it is a great way to give
leftovers a new look with little expense!
Ingredients:
¼ cup refried beans*
¼ cup leftover taco meat*
2 tortillas*
1 tablespoon chopped onion (If desired)
1 tablespoon chopped pitted black olives (If desired)
¼ cup (25g or 0.9oz) shredded mild cheddar cheese
¼ cup (25g or 0.9oz) quesadilla cheese*
Cooking spray or olive oil
Taco sauce or salsa
Directions:
Preheat oven to 350F (180C or Gas mark 4).
Line a baking sheet with parchment paper.
Place one tortilla on the parchment paper. Spoon the refried
beans onto the wrapper and spread the beans all over the wrapper. Then do the
same with the taco meat, chopped onions, and the black olives. Sprinkle both
cheeses over the top of the black olives.
Cover with the second tortilla then spray the top of the
tortilla with cooking spray or brush with a little olive oil.
Put into the preheated oven for 15 to 20 minutes or until
heated through, and the cheese is melted.
Wait a few minutes to cool slightly
then cut into wedges. I always use my pizza cutter for this.
Serve with taco sauce or salsa.
Makes one quesadilla
*Notes:
Use as much of the refried beans and/or meat as you want. It
is your quesadilla so make it to your liking.
Tortillas can be either the huge or smaller ones again this
is your preference. If using the bigger wrappers I would add more beans and
meat.
I use Ole Mexican cheese or Cacique Queso Quesadilla cheese.
I cannot find the equivalent of the quesadilla cheese in
Europe. If anyone knows where this cheese can be found we would love to hear
about it!!
